Breakfast Cookies

Cookies for breakfast?? You read that right. And not only are they amazingly delicious, but they’re sugar free and pretty healthy. Charlotte didn’t care for them — but Faye devoured 2 of them and wanted more! They were so fun to whip up really quickly for the girls and had minimal ingredients. Guaranteed you’d be able to make these in any country or context.

Breakfast Cookies

30 minutes - serves 4-6

2 bananas, mashed

2 cups instant oats

1/4 cup ground flax seed

1/4 cup ghee (or melted coconut oil or melted, cooled butter)

1/3 cup creamy peanut butter (or any favorite nut butter)

1 egg

1 tsp vanilla

1/2 tsp salt

2/3 bar Amul Dark Chocolate, chopped

  1. Preheat oven to convection at 170 degrees celsius.

  2. Mix all ingredients together and spoon 1/4 cup of batter onto a lined baking sheet. Should make 8 cookies.

  3. Smash down lightly and bake for 15-20 minutes until golden.

  4. Serve warm with a glass of fresh milk!
