Sugar Free Apple Butter

3 hours - makes 32 oz

8 apples, diced (no need to peel)

1/3 cup honey

1 cup apple juice or cider

1.5 tsp ground cinnamon

pinch of salt

1 tsp ACV

STOVETOP:

  1. Place all ingredients in a large pot except for the ACV. Cook on low heat for 2.5 hours until all apples are soft and mostly disintegrated. Cover the pot while simmering, and occasionally stir. If the mixture gets too dry, just add more cider/juice.

  2. Once the mixture is mostly mushy, turn the heat off and let cool slightly and add the ACV.

  3. Blend the entire mixture with either an immersion blender in the pot or in a blender. After blending, cook for an additional 8-10 minutes, stirring consistently. This final cooking is to ensure that most of the moisture is cooked out of the apple butter.

  4. Cool and refrigerate!

  5. Serve with toast, scones, muffins, or use in your favorite recipe!

CROCKPOT:

  1. Place all ingredients except ACV in the crockpot and cook on low for 4 hours or on high for 2 hours.

  2. Follow steps 2-5 above.

INSTANT POT:

  1. Place all ingredients except ACV in the Instant Pot and cook on high pressure for 10 minutes.

  2. Release pressure and follow remaining steps 2-5.
