Picture this: It’s been a long day. You’re exhausted, you’ve fought with rickshaws for the right rate, you’ve spoken in another language for half the day, the delivery guy couldn’t find your house, and it took you all day to go to the post office and you still didn’t get to do the one thing you set out to do today.

Enter: this recipe — Brodie’s Chocolate Lava Cakes. They’re so easy and the ingredients are so accessibly I’m convinced you’ll be able to make these from Mumbai to Mysore and everywhere in between. Expat life is super hard — full of ups and downs and incredible joys and painful, exhausting lows. This recipe is super fun — Brodie said, “As long as it takes you to make them, the oven will be preheated. And then, as long as it takes them to bake, you can clean up your mess.” Perfect!

Brodie’s Chocolate Lava Cakes

30 minutes - serves 2

3 oz Amul dark chocolate, chopped

3 Tbs salted butter, plus more for mugs

3 Tbs caster or superfine sugar, plus more for mugs

1 egg

1 egg yolk

1 tsp vanilla extract

2 Tbs Maida (all purpose flour)

  1. Preheat your OTG with top and bottom elements on to 190 degrees Celsius. Grab 2 coffee mugs and butter the insides of them with butter, and then coat the butter lightly with sugar.

  2. In a microwave safe bowl, add the butter and chocolate and microwave at 30 second intervals, stirring in between each interval. Repeat until melted together and no more lumps of chocolate exist.

  3. In a separate bowl, combine the egg, egg yolk, sugar, and vanilla extract and whisk well until the frothy on top and slightly pale. Add the flour, stirring to incorporate. Then add the chocolate/butter mixture, stirring gently until combined.

  4. Pour the batter evenly into each mug. Turn the top element of your OTG off and bake for 13-15 minutes, watching closely to make sure they are slightly set (they jiggle slightly in the middle) but not cooked all the way through.

  5. Run a knife around the edges of the mug and place a bowl or plate on top of the mug. Holding the plate/bowl tightly over the mug, flip the mug upside down and tap the bottom to fully release the lava cake. Repeat with the second cake.

  6. Serve warm with a scoop of vanilla ice cream!
