Set and Forget Oatmeal

This recipe came about as an accident, honestly. Where we are currently it’s a little cold in the mornings still. Brodie loves oatmeal and bought some, asking that I’d make it in the mornings one day (why does breakfast feel like the hardest meal??). Anyways, before the kids got up, i threw all the ingredients in my instant pot because, yay!, we had power. Came upstairs and started getting dressed, ready, etc — and completely forgot about the oatmeal! I rushed downstairs and was pleasantly surprised that it was absolutely perfect. This recipe is as simple as it comes — no fancy ingredients, just the run of the mill oatmeal that my kids devoured. We top ours with cookie, almond, or peanut butter, yogurt, and frozen berries (helps cool the oatmeal for the kiddos). Everyone takes theirs a little differently, and my current favorite is cookie butter, frozen raspberries, and plain yogurt. Hope you add this to your expat kitchen rotation! I’ve included stovetop versions too in case you don’t have an instant pot (you just won’t be able to walk away from it).

Set and Forget Oatmeal

30 minutes - serves 4-5

1 cup milk of your choice

1 cup water

1 cup rolled oats

1 tsp ground cinnamon

2 tablespoons butter or coconut oil

1/3 cup brown sugar (or honey/maple syrup)

pinch of salt

(alternate additions: chia seed, bee pollen, flax seed, ground cardamom — the possibilities are endless!)

INSTANT POT DIRECTIONS:

  1. In the instant pot, add all ingredients & stir. Hit the Sauté button with a 10 minute timer.

  2. After 10 minutes, come back and stir the oatmeal. THAT’S IT. Serve warm with your favorite toppings!

STOVETOP DIRECTIONS:

  1. Add all ingredients to a sauce pan stir. Turn the burner on to medium low flame (medium electric heat) and stir continuously for about 10 minutes until the oats are thickened and cooked through.
