Copycat Shake and Bake Chicken Tenders

My kids LOVED these. Like, at one point, Charlotte said “Mommy why did you make us these? Cause you love us? Why are they so yummy??” Ha! She’s the best hype girl. They’re the perfect, super easy dinner idea that doesn’t require much. If you make these, you gotta make some of my sauces — my Chick-fil-a or Taco Bell sauce! It totally makes it.

Copycat Shake and Bake Chicken Tenders

30 minutes - serves 4-6

MARINADE:

1 kg boneless chicken thighs, cut into strips

1/2 cup dahi (plain yogurt)

1 tsp dried thyme

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

BREADING:

1 cup crushed monaco crackers (ritz)

1/2 cup grated parmesean

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp dried thyme

salt & pepper

Extra Virgin Olive oil

  1. Preheat oven to convection at 220 degrees celsius with both the top and bottom elements. (if in the states, preheat the oven to 450)

  2. Mix all the marinade ingredients together and let sit for at least 15 minutes.

  3. Mix all the breading ingredients together. Dredge the chicken strips into the breading and press the mixture into the chicken so it’s well coated.

  4. Place the strips on a baking sheet (make sure you do not overcrowd or the chicken will steam) and drizzle each strip on top with olive oil.

  5. Bake for 15-20 minutes on the rack closest to the top element, flipping halfway through.

  6. Serve with Copycat Taco Bell sauce!
