Kelsey's Gluten Free Energy Bites

Remember in like 2017 and 2018 when these energy bites took Pinterest by storm? I do. We made them all the time, but quite honestly, me and Brodie quickly got tired of them. We ate them nonstop for a couple months and then never really wanted them again. Enter my sweet friend, Kelsey Brown. She told me about her recipe and how she adds crunchy cereal and coconut oil and it was a game changer. At first, I was a skeptic to be honest. But then we made them. And Brodie, (who I’ve mentioned can be one of my worst critics) devoured about 4 of them in a row and told me they were they best ones I’ve ever made. My kids? INHALE them. The crunchy cereal honestly gives them a slight butterfinger type texture and my family loves to play with the additions — white chocolate chips, dried fruits etc. We even made a batch and took them on our most recent vacation — which were a huge hit and so helpful for those mid day swimming hunger pains. Try them — I know you’ll be changed!

Kelsey’s Gluten Free Energy Bites

Makes about 12 bites - 15 minutes

1 cup plain oats

1 cup crunched cereal (we use Special K but you could also use corn flakes or All Bran flakes)

1/2 cup ground flaxseed

1/2 cup chocolate chips (optional)

1/2 cup peanut butter (crunchy or smooth — your preference)

1/4 cup chia seeds

1/3 cup honey

1 tsp vanilla

1 tbs coconut oil

  1. Mix everything together and store in the refrigerator for 30 minutes. Roll into tablespoon sized balls and store in an airtight container for up to 1 week.

  2. Enjoy as a snack, with a cup of chai or coffee!

Notes: Our family loves to add bee pollen for some additional anti-inflammatory support. It’s also fun to add dried fruit. One time I did white chocolate chips and dried strawberries and it was so good! This recipe is super versatile and if you’ve ever made something similar to these before your lives will be changed with the addition of the coconut oil and cereal, promise!
